Poptastic Puffy German Pancakes

I am sure you have heard the words Pop Up Pancakes or Puff Pancakes...maybe even German Pancakes. Well this recipe came to me from Marissa at Rae Gun Ramblings and at the time when I  first read drooled over it, it never dawned on me that we had actually had these before but in smaller form. That thought hit me when I was making them. Whether you make them big or small ...let me tell you they are delicious, especially when paired with fruit and whip cream if you have it on hand. All that light, puffy goodness filled with sweet fruit, sticky syrup and whip cream...a calorie nightmare but a necessity once in a while needed to fill that sweet craving we all get from time to time.

Pop Up Puffy German Pancakes Recipe

4 Eggs
2/3 Cup Milk
2/3 Cup Flour
1/4 Teaspoon Salt
1 Tablespoon Butter

Place your baking dish in the oven and preheat it to a toasty warm 400ยบ.

While your oven heats you can blend together your eggs,



milk, flour and salt until you reach a smooth consistency.



Place your Tablespoon of butter into your hot dish and slide it around so that it melts evenly onto the dish. Now pour your batter into the dish and bake for 20 minutes uncovered.

That's it...that is all there is too it...if you would like to create smaller ones you can start by mixing your batter in a blender and then pouring it into muffin tins and baking in the oven just the same. This will result in mini puff pancakes that you can then fill with an assortment of fruit fillings.



For now we will just work with large...remove it from the oven...slice it into your required portions...sprinkle some icing sugar...top with fruit and pair with some salty bacon and you are set for a heaven filled meal.
