What To Do With Turkey Leftovers?

Christmas of 2012 has come and gone but if you are anything like us you will have leftover turkey sitting in your freezer just waiting to be eaten. There are many ways to incorporate turkey into your meals...and with the click of a mouse you will find list upon list. Despite all the options out there my most favorite way to use up turkey dinner leftovers is in...

Homemade Turkey Pot Pie...soo good!

For creating your own you will need the following leftover or fresh ingredients:

Turkey
Mashed Potatoes
Carrots
Stuffing
Cheese Sauce
Gravy
Salt
Pepper
Butter
Batch of Rough Puff Pastry (homemade or store bought works just fine)

Start by shredding your turkey until it is left in very small, easily heated pieces. Next you will want to chop your carrots up small if they are not already like that.

Taking all your ingredients listed above, toss them into a large bowl and mix them together well.



Once they are fully mixed scoop them in to your baking dish. I use a meatloaf pan but feel free to use whatever you have on hand.

At this point you will need to lightly flour your counter top and roll out your homemade or pre-bought puff pastry...



and cut to cover the top of your baking dish.



With a pastry brush lightly add some butter to the entire surface of your puff pastry.

All that is left to do now is bake in a 350ยบ oven for 30 minutes or until the pastry topping starts to turn golden brown in colour.



Serve with a side of cranberries...
