Who Wants Peanut Butter Cake For Appreciation Day?

In our house we have adopted a new tradition this year called "Appreciation Day". On that day once a month; we all get together and create a special dinner with posters, a framed picture of why we appreciate someone; complete with their favorite foods and treats for dinner for one member of our immediate family.

This tradition started because each of us at times would mention that we were feeling unappreciated. It got me thinking, that although deep down we know that we appreciate the others in our family we really don't do enough on a regular basis to remind them just how much we do.

I thought it would be fun to have a mini celebration to remind each of us the reason why we appreciate someone and allow us to show them in a more personal way just how much we love them.

 In the month of March it was BabyBears appreciation day and because she has a deep and I mean DEEP love for peanut butter I decided to make her a peanut butter cake that I have been dying to have go at. I first saw this recipe on Pinterest. The pictures found on The Girl Who Ate Everything made it mouth watering all by themselves. Now that we have had it let me tell you...those pictures lived up to what I had in my head.

You will need the following ingredients to make your own drool worthy Peanut Butter Cake:

1/4 Cup Creamy Peanut Butter
1 Cup Water
1/2 Cup Butter
1 Cup Sugar
1 Cup Brown Sugar
2 Cups Flour
1 Tsp Salt
1 Tsp Baking Soda
2 Eggs
1/2 Buttermilk (store bought or make your own as found here)
1 Tsp Vanilla

Start by preheating your oven to a toasty warm 375º.

In a medium pot toss in your peanut butter, water, butter and bring them to a rolling boil at which time you remove from the heat.



In a side bowl combine your sugar, brown sugar, flour, salt and baking soda...create a well in the middle and pour in your heat peanut butter mix.
Apparently the ingredients were prepping fro their heart shape later with a heart shaped shadow :P

To that add the eggs, buttermilk and vanilla and mix well.



At this time you will need to line a baking sheet with parchment paper for easy removal after baking. Pour in your batter and bake at 375º for 15 minutes.

While the cake is baking you can prep the icing that will be used to make this cake all the more delicious.

Icing:

3/4 Cup Butter
6 Tablespoons Buttermilk
1/2 Cup Peanut Butter
3.5 Cups Powdered Sugar
1 Tablespoon Vanilla


In a small pot bring your butter, buttermilk and peanut butter to a boil. Remove your mixture from the stove to cool slightly and toss in your powdered sugar and vanilla...combine well. I found that this icing recipe actually makes a nice fudge so don't worry if you don't need it all on the cake...DELICIOUS!!

With everything prepped and baked you are ready to pair the 2 together. The recipe calls for pouring this icing over the cake which by all means I welcome you to do. In order to fit in with my schedule of the day I made these earlier and not wanting BabyBear to see I put it all aside until after dinner. At that time I took out the sheet cake and cut it in to heart shapes, layering the icing in between 2 layers and topping it off with more...so perfectly cute for a BabyBear appreciation day!



When I served it I sliced the hearts in half and paired each piece with a scoop of ice cream and a drizzle of chocolate ...SOOO GOOD!
